Melanoidin malt is similar to Munich malt. It is slightly darker and has an even richer malty flavour and aroma.
When used in significant quantities it will darken the beer, contributing a deep amber colour.
Melanoidin malt is often responsible for the malty taste of many German beers, and can be used in any beer where a strong malt flavour is desirable.
I have used it successfully in the past to add character to honey beer. It adds flavours that emphasise the natural honey aromas.
